Jasmine rice and blueberry pancakes



This jasmine rice dish is one of my favorites to make.  All it is is jasmine rice, sauteed peppers and onions, a little soy sauce, and some major grey's mango chutney.  It is sweet and sour and very filling.  I made this one like 2 months ago, but I make it a lot.







These are some vegan pancakes I whipped up one night. I'm not sure what all I put in them, but surely it was along the lines of wheat flour, a little brown sugar, ground flax seeds, frozen blueberries, soy milk, and baking soda. I remember thinking they were a little gooey in the middle, but that happens when you use wheat flour instead of pastry flour. They tasted good until I accidentally sprinkled cumin on top thinking it was cinnamon.
