Today I went grocery shopping and picked up some great vegetables. I found some organic whole wheat couscous and got that, too. A lot of people think that couscous is a grain, but it is actually a very small pasta. It is important to buy whole wheat couscous if you are trying to make meals healthier than just using noodles. Also, it expands greatly, so it is important to only ration out about 1/8 of a cup per serving. That really reduces the calorie content in the meal. So I got this couscous, some mushrooms, a can of chick peas, fresh asparagus, and some roma tomatoes. I decided to throw it together with whatever I already had, which happened to be carrots, onion, pine nuts, curry, zucchini, and tomato sauce. That sounds totally bizarre, but it was absolutely fantastic.
I roasted some asparagus in a little olive oil and curry. While that was happening, I diced up the veggies and got the couscous boiling. It only took 3-4 minutes before it was ready. I put some vegetable bouillon in the couscous while it was boiling. Then I sauteed the veggies in just a tablespoon of olive oil, mixing in some curry as I went. Then I dumped the couscous in the veggie pan and added tomato sauce and pine nuts and mixed it all up. It tasted amazing. The pine nuts stayed crunchy and added a great element.
I'm thinking about making this blog not only about my cooking discoveries, but also about my new craft discoveries. I just made a pair of curtains for my room and I'm proud of them. I've also done a lot of painting. I may do that sometime.
